Fried Fish and Potato Picnic

Super delicious super fun perfect for picnics. Here is the yummy recipe for fish and potatoes.

The Fish & Potatoes
- 1 lb (500g) Salted Cod: (If using dry salted cod, soak it in water for 24-48 hours, changing water frequently. If using fresh cod, just season with a little salt).
- 1.5 lbs (750g) Potatoes: Peeled and cut into small 1/2-inch cubes.
- 2 Large Onions: Thinly sliced into half-moons.
- 3 Garlic Cloves: Minced.
- Vegetable Oil: For frying the potatoes.
- Olive Oil: For sautéing.
The “White Gravy” (Béchéme/Cream Sauce)
- 2 cups (500ml) Heavy Cream (or “Natas”).
- 2 tbsp Butter.
- 2 tbsp All-purpose Flour.
- 1 cup Whole Milk.
- Seasonings: Salt, black pepper, and a generous pinch of nutmeg (essential for the flavor).
- Topping: 1 cup shredded Cheese (optional, usually Mozzarella or Parmesan) and breadcrumbs.

- Prepare the Fish: Boil the cod for about 10 minutes. Drain, remove any skin or bones, and shred it into small flakes. Set aside.
- Fry the Potatoes: Lightly fry the potato cubes in vegetable oil until golden but not overly crunchy. Drain on paper towels and sprinkle with a little salt.
- Note: You can roast them in the oven for a healthier version.
- Sauté the Aromatics: In a large pan, sauté the sliced onions and garlic in olive oil until they are soft and translucent (don’t brown them). Add the shredded cod and stir for 5 minutes.
- Make the Gravy:
- In a separate saucepan, melt the butter. Whisk in the flour to create a paste (roux).
- Slowly whisk in the milk until thickened.
- Stir in the heavy cream.
- Season with salt, pepper, and nutmeg. It should be thick enough to coat the back of a spoon.
- Assemble: In a large bowl, mix the fried potatoes, the cod/onion mixture, and about 2/3 of the cream sauce.
- Bake: Transfer the mixture into a greased baking dish. Pour the remaining cream sauce over the top. Sprinkle with cheese or breadcrumbs.
- Final Touch: Bake at 400°F (200°C) for about 15-20 minutes, or until the top is bubbly and golden brown.
- Picnic ready!
