Gravy Chicken Picnic

This chicken recipe uses flour to make the gravy, however, I have made gravy by reducing the chicken water. It makes for good gravy and also no flour calories, here is the yummy picnic recipe.

For the Chicken:
- 2 large boneless, skinless chicken breasts (or 4 medium/small breasts)
- Salt and black pepper to taste
- ½ teaspoon garlic powder
- 1 tablespoon olive oil
For the Gravy:
- 3 tablespoons butter, divided
- 2 tablespoons all-purpose flour
- 1 ¼ cups chicken broth
- ¼ teaspoon Italian seasoning (or a mix of dried thyme, rosemary, and sage)
- ¼ teaspoon onion powder

- Prepare the Chicken: Cut the chicken breasts in half lengthwise to create four thinner cutlets. This helps them cook faster and more evenly. Season both sides of the chicken with salt, pepper, and garlic powder.
- Cook the Chicken: Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Once the butter is melted and sizzling, add the chicken to the pan. Cook for about 4-5 minutes per side, until a golden crust has developed and the chicken is cooked through to an internal temperature of 165°F (74°C). Transfer the cooked chicken to a plate and set it aside.
- Make the Roux: Reduce the heat to medium. Add the remaining 2 tablespoons of butter to the same skillet. Once it’s melted, sprinkle in the flour. Whisk continuously for about 1-2 minutes until the flour is cooked and forms a paste (a roux). This will get rid of the raw flour taste.
- Create the Gravy: Slowly pour in the chicken broth, whisking constantly to prevent lumps. Continue whisking until the flour has fully dissolved and the mixture is smooth. Stir in the Italian seasoning and onion powder.
- Finish the Dish: Return the chicken and any accumulated juices from the plate back to the skillet with the gravy. Let it gently simmer for another 4-5 minutes, allowing the gravy to thicken and the chicken to absorb the flavors.
- Serve: Serve the chicken and gravy over mashed potatoes, rice, or biscuits. Garnish with fresh parsley if desired.
