Yummy Eggplant Caviar

Aubergine Caviar (eggplant dip) - French Cooking Academy

Eggplants are super nutritious packed full of vitamins, especially when made into a yummy caviar appetizer. Here is the delicious recipe to make this juicy picnic dish.

1 large eggplant (about 1 3/4lbs)

1/4 cup tahini

1/4 cup fresh lemon juice

1 to 2 tsp garlic paste (2 garlic cloves mashed with a tsp of salt)

1 tsp pomegranate molasses (optional)

  1. Char the eggplant on a flame (use the bbq grill or the stovetop grill) until blackened and softer. Make sure to prick it first or it will burst. Transfer the eggplant to a colander set on a bowl to cool a bit and drain its brown juice.
  2. Once cool, peel and mash the eggplant. Drain for 30 minutes.
  3. Transfer to a bowl and add the rest of the ingredients and taste to adjust the seasoning. Serve in a bowl with a drizzle of olive oil and, if desired, a few pomegranate arils to garnish. Serve with Arabic bread (pita) or croutons.

  • Thanks for your posting. I also believe laptop computers are getting to be more and more popular nowadays, and now will often be the only sort of computer found in a household. It is because at the same time they are becoming more and more affordable, their processing power is growing to the point where they are as highly effective as desktop computers from just a few years back.
