Chocolate Lava Picnic

Hot chocolate super yummy for winter and this cake has hot chocolate brewing on the inside. Here is the yummy picnic recipe.

| Quantity | Ingredient |
| 4 oz | High-quality bittersweet chocolate (about 60-70% cacao), chopped |
| 4 tbsp | Unsalted butter, cut into pieces |
| 2 | Large eggs |
| 2 | Large egg yolks (in addition to the 2 whole eggs) |
| 2 tbsp | Granulated sugar |
| 1 tsp | Vanilla extract |
| 1 tbsp | All-purpose flour |
| Pinch | Salt |


- Prep the Pans: Preheat your oven to 425°F (220°C). Grease four 6-ounce ramekins (small oven-safe dishes) very well with butter, then dust the insides with a little flour or cocoa powder.
- Melt the Chocolate: In a microwave-safe bowl (or over a double boiler), combine the chopped chocolate and butter. Heat until melted and smooth, stirring occasionally. Let it cool slightly.
- Mix the Eggs: In a separate medium bowl, whisk the 2 whole eggs, 2 egg yolks, sugar, and vanilla extract until the mixture is a pale yellow and slightly thickened (about 1 minute).
- Combine: Gently pour the slightly cooled chocolate mixture into the egg mixture. Whisk until just combined.
- Add Dry Ingredients: Whisk in the flour and salt until the batter is smooth and there are no streaks of flour left. Do not overmix!
- Bake: Divide the batter evenly among the four prepared ramekins. Place the ramekins on a baking sheet and bake for 12-14 minutes. The edges should look set, but the center should still look soft and jiggly.
- Serve: Let the cakes cool in the ramekins for 1 minute. Carefully run a knife around the edge, then invert each cake onto a small serving plate. Dust with powdered sugar, and serve immediately with ice cream, whipped cream, or fresh berries!
