Simple & Fluffy Pancake Recipe

  • 1 ½ cups all-purpose flour
  • 3 ½ teaspoons baking powder
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 1 ¼ cups milk
  • 1 large egg
  • 3 tablespoons melted butter, cooled slightly, plus more for the pan
  1. Combine Dry Ingredients: In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  2. Combine Wet Ingredients: In a separate medium bowl, whisk together the milk, egg, and cooled melted butter.
  3. Mix Batter: Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly lumpy; be careful not to overmix, as this can make the pancakes tough.
  4. Heat the Griddle: Heat a lightly greased griddle or nonstick skillet over medium heat. You can test if it’s hot enough by flicking a few drops of water onto the surface; if they sizzle and dance, it’s ready.
  5. Cook Pancakes: Pour about ¼ cup of batter for each pancake onto the hot griddle. Cook for 2-3 minutes, or until you see bubbles forming on the surface and the edges look set.
  6. Flip and Finish: Flip the pancakes and cook for another 1-2 minutes, or until the bottom is golden brown. Repeat with the remaining batter.

Tips for the Best Pancakes:

  • Mix lightly: A lumpy batter is a good thing! Overmixing develops the gluten in the flour, leading to flat, chewy pancakes.
  • Let the Batter Rest: Letting the batter sit for a few minutes (5-10) before cooking allows the baking powder to activate, which will result in fluffier pancakes.
  • Keep Them Warm: To keep your finished pancakes warm while you cook the rest, place them on a baking sheet in a 200°F (90°C) oven.
  • Customize! This is a great base recipe. You can add things like chocolate chips, blueberries, or a touch of vanilla extract to the batter for extra flavor.
