Fruity Fruit Pancakes

Pancakes are super refreshing morning dish, and with fruits it makes it more healthy. These pancakes focus on fruits and adding different fruits for super special pancake picnic

  • 1 flax egg
  • 2 medium bananas
  • 1 ½ cups plant-based milk
  • 1 tablespoon apple cider vinegar
  • 3 tablespoons vegan butter
  • 1 tablespoon agave nectar
  • 2 ½ cups whole wheat pastry flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup raspberries (see note)

  • First, prepare the pancake batter: add all of the pancake batter ingredients to a large bowl and mix until the batter is smooth.
  • Next, thinly slice your fruit. Then bring a griddle or frying pan to medium heat and grease it well.
  • Coat each fruit slice in pancake batter and place the coated fruit on the greased griddle/pan. You can either coat each fruit slice individually or add all of the fruit slices to the pancake batter and gently stir to evenly coat them in batter.
  • Cook the pancakes for several minutes on each side until they’re crispy and golden brown.
  • Once cooked, remove the pancakes from the griddle and plate. Top with your favorite toppings and enjoy!
  • Picnic ready!
