Rice Pudding Picnic
Rice is super yummy with chicken but also if you add some sweet raisins and cinnamon plus vanilla. Here is the yummy recipe
- 150g (2/3 cup) medium-grain white rice
- 2 tbsp caster sugar
- Pinch salt
- 1L (4 cups) milk
- 1 tsp vanilla extract
- 180g block Milky Bar chocolate, chopped
- Select all ingredients
- Preheat oven to 160C/140C fan forced. Lightly grease a 5cm-deep, 6-cup-capacity ovenproof dish then place on a baking tray.
- Combine the rice, sugar and salt in prepared dish. Whisk 250ml (1 cup) milk with the vanilla and pour over the rice mixture. Pour over remaining milk. Add 2/3 of the chocolate and stir briefly to combine.
- Bake, uncovered, for 1 hour 45 minutes. Dot remaining chocolate over the surface (it will have a skin by this stage). Cook for a further 15 minutes or until rice is tender (see note). Set aside for 10 minutes before serving.
