French Toast Picnic

French toast is super yummy. Its an egg dipped bread then fried and topped with any toppings. Super yummy with syrup and chocolates.
The Beverly Hills Pistachio & Berry French Toast

The Foundation:
- Bread: 1 thick-cut loaf of Brioche or Shokupan (Japanese Milk Bread).
- Batter: 3 large eggs, 1 cup whole milk (or almond milk), 1 tsp vanilla extract, and a pinch of salt.
- Spices: 1/2 tsp ground cinnamon and 1/4 tsp ground nutmeg.
- Sweetener: 1 tbsp sugar or honey.
The Toppings & Accoutrements:
- Berry Compote: A blend of raspberries, blueberries, and blackberries simmered with a touch of sugar and lemon juice.
- Pistachio Element: Pistachio ice cream (one scoop) and a handful of toasted, crushed pistachios.
- Garnish: Fresh elderflower sprigs (for that floral Beverly Hills touch) and a drizzle of honey or maple syrup.
- Fat for Frying: Unsalted butter or a light drizzle of pistachio oil.

- Prepare the Compote: In a small saucepan, combine the mixed berries with a tablespoon of sugar. Simmer over medium-low heat for about 8–10 minutes until the berries break down and the liquid thickens into a glossy syrup. Set aside to cool slightly.
- Whisk the Custard: In a shallow bowl, whisk together the eggs, milk, vanilla, sugar, cinnamon, and nutmeg until fully incorporated.
- Soak the Bread: Slice the bread into very thick slices (about 1.5 to 2 inches thick). Place each slice into the custard, allowing it to soak for about 60 seconds per side. You want it saturated but not falling apart.
- Sear to Perfection: Heat a non-stick skillet or griddle over medium heat. Melt a generous knob of butter. Place the soaked bread in the pan and cook for 3–4 minutes per side until golden brown and slightly crisp on the edges.
- The Assembly: * Place the warm French toast on a plate.
- Spoon the warm berry compote over the center.
- Place a cold scoop of pistachio ice cream right on top.
- Sprinkle with crushed pistachios and garnish with the elderflower.
- Garnish: Finish with a light drizzle of honey or maple syrup.
