Skittles Sugar Cookies

Skittles is a brand of fruit-flavored candy, currently produced and marketed by the Wrigley Company, a division of Mars, Inc. The interior consists mainly of sugar, corn syrup, and hydrogenated palm kernel oil along with fruit juice, citric acid, natural and artificial flavors.
Ingredients for Skittles Cookies
- 1/3 cups of unsalted butter at room temperature
- 1 egg
- 1/2 tsp pure vanilla extract
- 1/2 cups of granulated sugar
- 1 1/4 cups of all purpose flour
- 1/2 tsp baking powder
- 1/4- tsp salt
- 1/3 cup of Skittles candy plus extra to decorate
- 1/4 cup of granulated sugar
Instructions
– Preheat the oven to 350 º F.Whisk together the flour, baking powder and salt in a large bowl and set aside.In the bowl of a stand mixer, cream together the butter and sugar.
– Mix in the egg and add the vanilla extract.
– Add the dry ingredients and mix well until a stiff dough forms. Mix in 1/3 cup of Skittles candy.
– Place the dough in the fridge for an hour. Take large spoonfuls of the dough and roll it into good sized balls (about 1 1/2 -2 inches. Roll the balls in granulated sugar.
– Add a few extra Skittles to the top of each cookie to decorate.Place the balls on a baking sheet lined with a silicone mat. Bake in the preheated oven for 18-20 minutes, until lightly browned. Remove with a rubber spatula to a wire rack and let cool. Makes 15 cookies.
– The cookies are best enjoyed right away, or they go kind of hard. Just pop them in the microwave for about 30 seconds if this happens.

Mix into small balls and separate them few inches apart so they have room to expand during baking.
