Spicy Sweet Tropical Pizza

Pizza is a well rounded meal because it has a variety of ingredients including pineapple and cheese and you can put any toppings on it for yummy picnics. Here is the recipe for this sweet and spicy pizza.

Base & Dough

  • 1 ball (approx. 1 lb / 450 g) pizza dough (store-bought or homemade)
  • 1/2 cup crushed San Marzano tomato sauce or barbecue sauce
  • 1 1/2 cups low-moisture whole milk mozzarella, freshly shredded
  • 1/4 cup smoked provolone or Monterey Jack, shredded (adds depth)

Toppings

  • 1 cup fresh pineapple, cut into bite-sized wedges (pat completely dry)
  • 4 strips thick-cut bacon, cooked until lightly crisp and chopped (or diced smoked ham)
  • 1 small fresh jalapeño, thinly sliced into rings
  • 1/4 small red onion, very thinly sliced
  • 1 tbsp hot honey (or regular honey mixed with a pinch of chili flakes), for finishing
  • 2 tbsp fresh cilantro leaves, for garnish
  • Picnic ready!
  1. Prep the Oven & Surface: Preheat the oven to 500°F (260°C) (or your oven’s maximum temperature). Place a pizza stone or heavy baking sheet on the middle rack to heat for at least 30 minutes.
  2. Caramelize the Pineapple (Key Step): Heat a dry non-stick skillet over medium-high heat. Sear the dried pineapple chunks for 2–3 minutes until lightly charred on the edges. This removes excess moisture and concentrates natural sugars so the crust doesn’t get soggy.
  3. Shape the Dough: Stretch or roll the dough on a piece of parchment paper into a 12- to 14-inch circle, keeping the rim slightly thicker than the center.
  4. Assemble:
    • Spread the sauce evenly across the base, leaving a 1/2-inch border.
    • Scatter the shredded mozzarella and provolone across the sauce.
    • Evenly distribute the charred pineapple, crispy bacon, sliced jalapeños, and red onions.
  5. Bake: Slide the parchment paper with the pizza directly onto the hot baking stone/sheet. Bake for 10–minutes, or until the crust is deeply golden and blistered, and the cheese is bubbling.
  6. Remove from the oven. Immediately drizzle with hot honey and scatter fresh cilantro on top. Let rest for 2 minutes before slicing.
  7. Picnic ready!
