The Cobb salad is a main-dish American garden salad typically made with chopped salad greens, tomato, crisp bacon, fried chicken breast, hard-boiled eggs, avocado, chives, blue cheese, and red-wine vinaigrette. The ingredients are laid out on a plate in neat rows.
- 1/3 c. red wine vinegar1 tbsp.
- Dijon mustard2/3 c.
- Extra-virgin olive oil
- Kosher salt
- Freshly ground black pepper1
- Head romaine lettuce, coarsely chopped4
- Hard-boiled eggs, peeled and quartered12 oz.
- Cooked chicken, diced8
- Slices bacon, cooked and crumbled1
- Avocado, thinly sliced4 oz.
- Crumbled blue cheese5 oz.
- Cherry tomatoes, halved2 tbsp.
- Finely chopped chives
- In a jar, shake together vinegar, mustard, and oil and season with salt and pepper.
- On a large platter, spread out lettuce, then add rows of hard-boiled egg, chicken, bacon, avocado, blue cheese, and cherry tomatoes.
- Season with salt and pepper, drizzle with dressing, and garnish with chives.
Salads are super nutritious, but no bacon for me on this salad.
